A few weeks back I made some awesome broccoli Soup. It’s the first time I’ve made broccoli soup and it was delicious. My four-year-old helped me. Let me tell you right now, make use of those “Campbell’s cream of whatevers”. Stalk up on them along with broth and when you get fresh veggies, you can put your crock pot right to work.
So I got some bagged fresh broccoli and a sweet onion. I roasted them over the stove in a tablespoon of olive oil.
Chop your onion real fine. I like the taste of sweet onion, but I don’t want to eat massive chunks of onion in my broccoli soup unless you of course like that kind of thing.
Make sure to use a lid on your broccoli, it helps them soften faster.
While you are sauteing the broccoli and onions, go ahead and add your Campbell’s cream of broccoli and cheese soup, plus fill the cans with milk and add them to the crock pot. I used two cans for a small batch for my son and I. I added a pinch of garlic powder and pepper and dill.
I did eat leftovers the next day, but it wasn’t a big batch as my husband is not a broccoli lover. But that’s okay, I can make this at lunch for myself when he’s at work.
Top with some cheddar jack cheese and in a few hours you’ve got yourself some really easy, delicious crock pot broccoli soup. Now I know it doesn’t look like this bowl is really full, but I have to tell you, these are my brand new gigantic soup bowls. These bowls are so big you won’t be going back for seconds if you fill the bowl to the top. They are just huge, but I love them in Navy Blue!
