There are times in the kitchen when I want to take my time and make everything from scratch, but then there are times when the weeks are busy and I don’t want to just throw a pizza in the oven just to have a quick meal. I want to provide my family with more variety. I like to come up with fast and easy solutions to busy week nights. I’m working on a busy weeknight meal solutions menu and this is one of the many recipes that will be added to that series. This sausage, perogies, and harvest vegetable dish can be baked in the oven and requires very little from you outside of turning the oven on and putting all the ingredients in the baking pan. The most you’ll have to do is cut up the sausage.
Only four packaged ingredients make up this lovely baked dish that will feed a family of four when you don’t have much time to cook in the evenings.
- 1 box of Mrs. T's Perogies any kind you like.
- 1 package of sausage, cut
- 1 package of Pict Sweet Harvest Vegetables with carrots, green beans and potatoes
- 1 shredded cheese
- Preheat oven to 350
- Cut the sausage into pieces, place in the bottom of a 9x9 or larger baking dish
- Add the frozen perogies
- Add the harvest vegetables
- bake in the oven for 25/30 minutes
- Remove and top with cheese, bake for five more minutes, or let sit outside the oven for five minutes.
