Halloween Recap and Pumpkin Seed Roasting Recipe


Oh, let’s see these days time just keeps ticking on and I’m realizing quickly that I’m forgetting to do the blogging I hope to do just to commemorate this time in my life. I mean five years from now things will be drastically different. In five years I ‘ll have a pre-teen. Ugh!!! So writing it all down, taking pictures, remembering the “now” will help me appreciate it later. 

We’ve had fun the last few weeks. It’s been busy but really when isn’t it busy? Even the weekends are busy, birthday parties, yard work to winterize it for the impending snow, football. 

At any rate, we carved pumpkins last week and roasted some pumpkin seeds. My husband did a great job at Jack Skellington. By the way, when are you supposed to watch “The Nightmare Before Christmas”? Halloween or Christmas?

We decided for the first and last year ever to roast pumpkin seeds. I found a good recipe on Pinterest and it tasted great, but I soon discovered I’m not a big fan of pumpkin seeds, so unless my three-year-old begs me to, we probably won’t do it again. No one else was really interested in them, but I could not get Braidy to stop eating them. I had to cut him off so many times.  Jaydon tried his hand at scooping out the seeds, but found it too gross for him and asked dad to take back over. 😉 


If you do love roasting pumpkin seeds though, we basted the seeds with melted butter, honey, cinnamon, sugar, and salt, then roasted it in the oven for an hour at 310 degrees. 



Also, this was the first year my oldest decided not to be some superhero. I was so excited when he said he wanted to be a police officer. Braidy was “Miles from Tomorrow Land”, it’s a Disney Junior show that he has been obsessed with lately.

And of course, Hunky Hubs and I walked around our neighborhood trick or treating with the kids in last year’s Halloween garb. We were pirates. Last year we had the privilege of trick or treating at Disneyland and got to enjoy Mickey’s secret Halloween party where they closed the park to all non-VIP guests. My son and husband got to ride the Rocky Mountain railroad ride like 4 times without having to get off and get back in line. It was so fun! I’d totally go again over Halloween.

  1. Sounds like you had a great Halloween! That Jack Skellington is awesome. A few weeks ago the director finally answered the age old question and confirmed its meant to be a Halloween movie (although it will always be a go-to Christmas film for me.) <3

  2. I tried to carve a pumpkin once and it looked like a 2-year-old did it. I’ve always felt bad about disposing of those pumpkin seeds, but you have eased my conscience today. Yes!

  3. What incredibly sweet pictures of the boys, and I love that pumpkin carving too. I love pumpkin seeds, but I have never roasted them myself. Your ones sound delicious to me.

  4. Hey at least you tried it. You can’t like everything right? I am like you in that I will try anything at least once to see if i like it. As far as pumpkin seeds go I love them but I am kind of a human garbage disposal and will pretty much eat anything. Your recipe looks similar to my wife’s recipe which is delicious by the way (just in case she asks). I would definitely eat them and most certainly enjoy it.

  5. Love the pumpkin carving. I too do not like pumpkin seeds but my son loves them. My bucketlist is to do Halloween at Disney World.

  6. This has always Been a family tradition for years, the kids love it and brings family memories to share years to come memories to share in the future.
