Mother’s day has come and gone and it was simple, sweet and perfect. My kids made me some things at school. I always love the ones with handprints! Braidy made me a hand-printed flower in a pot. In addition to his hand-print flowers, he also made me a little clay pot. Jaydon made me a card and a magnet of a picture he drew of himself.
On a field trip with Jaydon down to the Colorado History Museum, he surprised me with a card he had folded up in his pocket that he made in art class.
While in many ways the day was like any other, I didn’t have any expectations. It’s best, and you are a happier mom to not have expectations on Mother’s day! I just let the day be what it was. It was a day my kids could express their love for me and a day I could enjoy some food I rarely get to eat. My family does not like Asian food. I, however, love it and thought Mother’s day would be the perfect opportunity to get my sushi fix on. I had yet to find a good sushi place since we moved to the front range so this was the perfect opportunity! After all, It’s mama’s day, so mama gets what she wants! 😉 I ended up finding a restaurant about two miles from us called Kobe Sushi.
At Kobe Sushi, I tried their Rocky Mountain rolls because after all, we live in Colorado. I tried a couple of other rolls like a tempura shrimp roll and a salmon roll. It was great! The Rocky Mountain rolls were my favorite! They were a tempura fried California roll topped with salmon and spicy crab meat. It was amazing and I will definitely order it again. In fact, I might just make this a regular lunchtime monthly occurrence on a day when I don’t want to eat dinner leftovers.
Anyway, I brought my smorgasbord of different sushi rolls home, sat at the dining room table while the kids watched me eat with curiosity. I let them each try a roll and they got through some of it without spitting it out. They loved the tempura crab topping though.
I can’t end this post though without thanking my husband for a Mother’s day gift he got me a few months back. When we moved here I was in love with all the water in Colorado and all the activities you can do on the water! I became enamored with paddle boarding. So my husband got me a paddle board! I have yet to take it out because the water is still pretty cold. I’m hoping in June I’ll get to use it for the first time on a camping trip we’ll be taking or even at a lake that is about a three-minute drive from us.
