When you think of tatertot casserole, you might think of the casserole made with hamburger and cream of mushroom. But this is different, this is more like hash brown casserole, minus the eggs. This is a dinner casserole, not a breakfast casserole and I decided to change things up because I thought my kids would like it better than the mushroom version…and they did!
Instead of cream of mushroom, this calls for cream of chicken and instead of hamburger, I use ham because I think it pairs better with cream of chicken than hamburger. This is incredibly easy to make and I would say counts as another comfort food in my mom book of recipes that my family loves.
Prep is really simple if you buy the ingredients like the ham pre-chopped. The only chopping you’ll do is with the green onions, or regular white onions if you like a really oniony taste like I do. I love onions, so I like using both!
- 1 bag of frozen tatertots
- 1 bag of diced ham
- 1/2 an onion
- 1/2 a cup of green onions
- Cream of chicken soup
- 1/2 cup of milk
- In a mixing bowl, mix together the cream of chicken soup and milk until all clumps have dispersed. Add your onions to the mixture.
- Grease a 9-11 inch pan, spread your tatertots and diced ham into the pan
- Pour the mixture over the tatertots and ham
- Top with 6 to 8 oz of shredded cheese
- Put in the oven (covered with tin foil) for 30 minutes or until sizzling hot.
- Remove tin foil the last 5 minutes.
And if you are worried about onions with your kiddos, they’ll hardly notice them. They’ll just be into all that cheese and of course tatertots!
